Apple Butter Cake

This is a cake made for fall, with the warm flavors of apple butter in a delicious cake.

  1. 2 cups Shawnee Mills All Purpose Flour, sifted
  2. 1/2 teaspoon salt
  3. 1 1/2 teaspoon baking soda
  4. 1 teaspoon cinnamon
  5. 3/4 cup Hiland Butter
  6. 3/4 cup dark brown sugar, lightly packed
  7. 2 Hansens eggs
  8. 1 cup Southern Roots Sisters Apple Butter
  9. 1 cup Miller Pecan Co. Pecans
  10. 1 cup dried apricots, chopped to the same size as the pecans
  1. Blend together butter, sugar, eggs and apple butter until creamy.
  2. Mix in the flour, salt, soda and cinnamon
  3. Fold in the pecans and apricots.
  4. Bake in greased small bundt pans or large muffin tins at 350 degrees for about 30 minutes or until it passes the toothpick test.
