Farm Fresh Corn Salad

Corn salad is just what you want in the heat of an Oklahoma summer. This one has a freshness from cilantro, peppers, squash and a vinaigrette with lime juice and olive oil.

  1. 2 tablespoons olive oil
  2. 4 cups fresh or frozen corn kernels
  3. 1 tablespoon Daddy Hinkles seasoning
  4. 1/2 teaspoon ground black pepper
  5. 1 zucchini squash, chopped
  6. 1 jalapeno pepper, seeded and chopped
  7. 1 red bell pepper, chopped
  8. 1/2 cup chopped Scissortail Farms Cilantro
  9. 1/2 cup fresh lime juice
  10. 2 tablespoon olive oil
  11. 1/2 teaspoon salt
  12. 2 avocados, diced
  1. Heat oil in a large sauce pan over medium-high heat.
  2. Add corn, Daddy Hinkles seasoning and pepper. Cook for about 8 minutes, stirring frequently.
  3. Remove from heat, and let cool.
  4. In a large bowl, combine corn, squash, jalapeno, bell pepper, cilantro, lime juice, olive oil and salt.
  5. Cover, and chill 30 minutes. Stir in avocado just before serving.
